Cranberry Coconut Energy Bites

Ok, so I've been trying out a few brunch recipes in the clean eating department, and I made these delicious no bake cranberry coconut energy bites - they were a huge hit.

People were saying they were going to make them and take to work – great idea for those that travel or are on the go a lot. It does not require an oven, it takes 15- 20 minutes, and it’ll last you 2 weeks in a sealed container!

Ready? Ok, here goes:

Prep Time: 15 min

Yield: about 20

Total time: 15-20 min

Ingredients

Dry Ingredients

  • ½ cup dried cranberries, chopped
  • ¼ cup almonds, finely chopped (you can also use walnuts, or another nut of your choice)
  • 1 cup rolled oats
  • 1 cup unsweetened coconut shreds or flakes
  • ¼ cup ground flaxseed

Wet Ingredients

  • ¾ cup natural, unsalted almond butter
  • ¼ cup pure maple syrup
 

How to make them…

 
  1. In a large bowl, mix together all of the dry ingredients: cranberries, almonds, oats, coconut and flax.
  2. Add almond butter and maple syrup. Using your hands or a sturdy spatula, stir and fold together until well incorporated.
  3. Scoop mixture into your hands (mine are 2 tablespoons each). Roll and press into bites. If the mixture is too dry, add in a bit more almond butter or maple syrup. If the mixture is too wet, add in a bit more coconut or oats. You want a slightly sticky dough texture.
  4. Enjoy!
